Why didn't they just give everyone poison? Jesus said his followers
could drink deadly poison and it would not hurt them.
That passage, at the end of the gospel of Mark, was not part of the original
gospel, but was added at a later date (it is not found in the earliest
texts, and is one of two alternate endings attached in later manuscripts
after the finding of the empty tomb). The "snake handling" part is, almost
surely, an allusion to the story in Acts of how Paul on the island of Malta
was bitten by a snake and did not suffer any ill from the attack. The
"poison drinking" part may allude to an extrabiblical story of an attempted
poisoning of the Apostle John (the poison turned into a snake and leaped out
of the cup, possibly accounting for the famous apothecary's symbol).
Even taking into account that the passage was long taken to be a part of the
original gospel (and some KJV-onliers still hold it so), it seems less a
promise that true followers of Jesus would be immune to poison than that God
would grant miraculous protection to the original disciples to aid the
original spread of the gospel. Taking it as either a guarantee to all
believers, much less as a recommendation as to conduct, seems a 20th-century
innovation, rather like finding references to atoms and the second law of
thermodynamics in Hebrews.

I would rather suspect it was taken from Luke 10:19
"And behold, I give you the power to tread on serpents and scorpions
and over all the power of the enemy and nothing by any means shall
hurt you."
Like wise in Luke 21 where the 5 or more women tell
of the empty tomb and are not believed, later manuscripts
added the verse where Peter later does go to the tomb,
echoing John 20.
This is also not in early scripts.
The woman taken in adultery is another example of a later
addition, sometimes found in Matthew in some manuscripts
in John.
