I seem to recall reading somewhere that the -ski suffix represented
nobility, rather like the German "von".

In that sense they could have been historically speaking patronymics, as the
Welsh names were, and then at one point crystallised into the surname. In
Iceland they still haven't crystallised, of couse, and in Russian, Ukrainian
and Belorussian you have both the surname and the patronymic, for example a
Belorussian I know is called Viktor Nikolayevitch Sakovitch.
Incidentally, if you are born in Russia, you must have a patronymic.
My daughter Tatyana was born in Moscow two years ago, and we wanted to
called her Tatyana Mary James, but they weren't letting us get away with not
having a patronymic, although I disagree with making your kids be forced to
repeat your name on principle, and so all her documents have the curious
combination 'Tatyana Mary Davidovna James', with various levels of success
in retransliterating that into latin letters.

The 'ov' or 'ow' part reflects the 'son of' aspect.
so does the '(w/v/-)+(ich/itz/ic/icz)' ending.
They appear one or another, as o' or mac/mc in goidelic names, but also you
can find both, as in my wife's maiden name 'lewkowicz'
The 'ov'/'ow' surname ending is a derivation from the slavonic genitive
plural. So 'Ivanov' means 'of the Johns'. 'Popov' means 'of the priests',
Kuznetsov means 'of the blackmiths' etc.
The -itch or -vitch ending for direct descendent of is a bit like the anglo
saxon form -ling. A kings son, which was aetheling in AS, is krolewicz in
Slavic. The ending also signifies a patronymic in Russian. Russians having
such surnames are identifiably of west slavic or south slavic origin, and
also Belorussians have these surnames very frequently.
-ski is an adjectival ending, very frequently added to place names. As a
surname, especially in Poland, this implies a descendency from the
'szlachta', or nobility. A Polish name in
-ski carries the same slight snob value of a name in 'de' in French 'van' in
Dutch or 'von' in German, 'ter-' in Armenian, etc.
If you see a name in Poland where an -ow element is followed by -ski, then
the -ow is likely to be derived from a place name, rather than a person.
The place name, in turn, may or may not have derived from a personal name.
Eg. Laskowski denotes someone whose ancsetor that first bore the name had
his estate at Lask, or Laski or Laskow.
There is no given name 'lask' or 'laska', although the latter is Polish for
'grace'.
