Elisabeth Lambert Ortiz was perhaps the first postwar food writer to
inveigle us into really trying the cookery of Latin America and the
Caribbean. She was of that group called "the scholar cooks" when
foodies were discovered by Harpers & Queen in 1984, for she seemed as
enthusiastic for researching the creation-myth of a dish, for instance
the mole poblano of Mexico, as she was for the cooking of it.
