Logitech
Though the software for the mouse may cause problems on the Mac (don't
install it unless necessary, it may not be). When I last tried the s/w the
only apparent effect was that it stopped me being able to click with the
mouse, and uninstalling the driver requires clicking a non-default button :-(
[I wrote an applescript that clicked the button :-D]

On Macs and PCs that have USB any USB keyboard or mouse (trackballs as well)
will work on either.
You might need a piece of software in some cases, and on the Mac side there
is such (though I can't think of the name right now) I expect that there is
an equivalent software on the PC side. (The one I am thinking of was designed
to operate game controllers of various types as well as keyboards and mice.)
Plus many makers of keyboards and mice also produce software drivers for Mac
and PC, Kensington is just one such. Logitec is another.
I have swapped lots of PC parts and equipment with a Mac for years, all it
takes in most cases is a bit of research to find out how to do it.

I've been using a Logitech cordless trackball/mouse on my Macs for years
now. It works fine. I wouldn't be without it. Most manufacturers have
download sites where you can upgrade your software if you change or
upgrade your platform.

Any USB keyboard, if you bother to learn how
to remap keys.
Mice? I have never bothered to examine PC
mice to see how their keys are mapped, but
I know it can be done, remapping 3 button
mice for left handers for example.
I dimmly remember somewhere seeing an article
on remapping mice for people with Macs that want
3 button mice, so it can probably be done.
OS X underneath is a BSD like derivative so
its probably easy enough if one knows how.
I suspect googling is in order.
Googling: apple, keyboard maps, PC keyboards
seems to pull up a whole bunch of how tos for
sharing keyboards and mice on mixed systems.
Say for somebody with 2 PC and 2 Macs on a KVM.
And people who hate Macs single button
mouse system.

I don't know about keyboards, but the typical modern USB mouse works on
both.
Maybe a USB keyboard will too, usually macs are pretty good about being
able to use stuff that's made for windows machines, but not vice-versa

Any USB device should work with Apples, PCs and most UNIX/LINUX
platforms. If your computer does not have a USB port, however (ie it was
made more than a few years ago), most likely nothing exists.
