The most likely explanations for this are:
1. It's a pack of lies. Always an attractive hypothesis, but the amount of
publicity that would predictably attach to this case probably rules out a
conspiracy.
2. She was misdiagnosed in the first place. This is probably the most
likely, as Parkinsonism is notoriously resistant to accurate diagnosis. It
is not a single syndrome, but a set of symptoms which may be caused by any
one of a number of factors, including Parkinson's Disease, various other
Parkinsonian syndromes or, according to
http://www.usd.edu/med/neurosciences/parkinsons.cfm "infections, trauma,
strokes, hypoxia, and almost anything else". Spontaneous recovery from some
of these causes is quite possible.
3. A dead guy got prayed to and asked God to suspend the laws of nature for
this nice nun. (I'm leaning away from this one)
