Weren't many of the Templars killed off by people with crossbows,
or am I thinking of some other group?
I remember seeing or reading about a group of soldiers who
refused to use crossbows because they thought they were too
unfair or un-warmanlike or something.

Yep, the hook is to pull Sir Knight off his horse, and the point does

The Templars were mostly slaughtered by Muslim Arabs under Saladin.
You might be thinking of the French. Supposedly the English two-fingered
gesture came from the time when the French threatened to cut off the
first two fingers of any Englishman caught with a longbow.

Longbows required a lifetime of practice. Crossbows were unsporting
because anybody could shoot one with reasonable accuracy, but they're
slower to reload. Both are distance weapons, great for ambushes, not so
good if Sir Knight manages to get in close. That's where you want pikes
or billhooks to keep the horsey fellas from trampling your archers.
