Canon A530. I just gave one for Christmas.
Like all Canon cameras, you just put the dial on "auto" and press the
button. The camera does the rest. I also like it because it takes
standard AA batteries rather than proprietary ones.

Canon's "A" series is named because they take AA batteries. They've got a
whole bunch of models to choose from . Some take 2 AA batteries, some take
4. The A530 takes 2.

Depends on how simple you want it to be, but a basic camera that takes
a very nice picture is the Canon Powershot... 103, we think. We got
one for my 12-year old for his birthday, and I've been surprised by
how nice the pictures are, especially since he's not exactly an RTFM
kid of kid. We like the various Nikon Coolpix versions... I think
it's the 775 that we both have... but I have to say that although it's
a point and shoot camera, it took me a while to get the hang of taking
good pictures with it.
Model numbers probably out of date.

There's the Sony Cybershot DSC-T10, it's nice and thin - in addition it
has Carl Zeiss optics and gives you image stabilization. It's got a good
size display on the back for you as well at 2.5"

I've always loved Nikon too and their S9 digital is another ultra
compact camera that I've handled in person and was impressed. This is a
full kit: memory card, extra battery, leather case, 5 year extended
warranty...all the goodies

If you're looking for something with a little more telephoto action
there's the Nikon Coolpix P4. Again...it's got a nice Nikkor lens that
gives you more telephoto action that the ultra compacts. Also has image
stabilization, and I like how the Nikon cameras implement the "scene
modes" for portrait, beach, action and such.

Panasonic seems to be fond of using AA batteries still, so that's a
handy feature if you think you'll be places where bringing a traditional
charger and all is a hassle. I haven't used their cameras but I know 3rd
party of a couple who are real travel folks that the Lumix DMC-LZ5 has
been a great camera for them.

Don't buy a camera based on the megapixel spec...the mfgs often just use
really large sensors that are of lower quality so the numbers look good.
When consumers are only given that number to shop by then 10 must be
better than 8! If you take a look at some of the prosumer SLR cameras
they often only use a 6-7mgpxl sensor but that's still enough to make a
print larger than 8.5"x11". The advantage is the glass making the picture.
So I'm biased against a lot of the consumer electronics companies such
as Casio who have gotten into the game. They know how to make circuits
and wire up big ol' CCD sensors to large screens on the back of the
camera -- but they have no experience with the glass. Sony recognized
this and went to Germany for their optics, Nikon has made their own
lenses for decades.
B&H out of NY is a great place to shop for photo gear. They've got good
prices and offer really good kits so you can get everything you need in
one swoop.
