Hey Dave(%), what do you know about... |
....cooking Bison? I just ordered a bunch of it, ground, steaks, and
roasts. I've been looking on the net some, and it appears Canadians are
the experts.
Any help would be greatly appreciated.

it is a popular item around here ,
just to the east of me are about 10 buffalo ranches ,
its kind of cool to see them grazing in the fields ,
i love buffalo burgers ,
as for how to cook the other cuts , you can do ,
just about anything you do with beef

i forgot to add just cook it on a little bit lower heat and a little bit
longer

since it is a more natural meat - i.e. they frisk around more, it is
leaner and tougher, so cook on a low grill flame, and perhaps marinate
it with an acidic solution - nixes the dam carginogens of grilling -
fat = cancer. personally, i'd leave the bison alone, and let the
american indians enjoy their multiduinous paths of wanderings of the
fabulous herds of animals = only eat bison if you are starving. they
are such a magnificent animal - how could you eat it? my son shot
partridge and for some reason we couldn't eat it - it's a wild creature
and it just turns your stomach. gee - butted in once more - you should
see jackass II - it's so bloody sick, but sometimes hilarious -- all i
can see is the butt of the joke.
