Yes, they can drip when you least expect it.
They use some kind of sauce that I really love but can't quite place. Maybe
peppercorn ranch. Whatever it is, it's good!

One thing you have in the southwest is real barbeque. At least that's
what the 'food channel' is showing me. Up here, a barbeque is a thing
you build with bricks, or buy at walmart, to cook hamburgers and hot
dogs 'on the barbeque', the grill itself. But you cats have food
called 'barbeque', and I need some, I want some...dry barbeque, where
they put on a powdered seasoning....or the other kind, where they soak
it in secret (invariably) barbeque sauce. Man, when those cooks open
that oven to turn those huge things, I get really, really hungry.
And I like the dudes who build their ovens and trailer them around the
south, winning contests. Everybody looks so darn happy...//
When I worked at a cafeteria in Arizona (spent 4 months), I'd eat tacos
everymorning. they were huge, they'd stand them up,by shoving lettuce
under one side. And the sauce was wetter, and hotter than these fast
food things. I buy the 12 shells, and a pound of hamburger, and the
shredded cheese, and lettuce and make them when I'm ambitious. But it
means I have to eat twelve tacos.

texas that there are 2 types of barbeque. there is memphis BBQ (pork

I knew I forgot something. That goes in the 'well drained' hamburger
after it's browned. or grayed, really....and I micro the shells with a
drop of water for 20 seconds. I think. I haven't done it in awhile.

I don't do the dry rub... I like my bar-b-que dripping and falling off the
bone.
The secret is slow cooking with convection.
You have to have proper air flow. The meat shouldn't be over the flames,
it should be allowed to cook near the flames until it's done. then you
start building up layers of BBQ sauce (I doctor mine with beer and
Dave's Insanity Sauce). Once you've got a good base coat going you move
the meat over the flames so it can char while you're keeping it moist by
basting it in more sauce.
I have a hard time getting my ribs off the grill with meat still on them.
I just made myself hungry... too bad it's snowing outside.
Though that doesn't always stop me from firing up the grill.

I went in, they had no more corn beef for a reuben. So I got 2
