Object: pumpkin seeds
anyone have any suggestions on anything interesting
to do with pumpkin seeds, other then bake them a
bit. I have 3 huge pumpkins here. I plan on doing
the carving for them sometime this week when I gain
the energy... I plan on saving the pumpkin inside to
make a few pies and pumpkin bars for the holidays.
the kid wants to do something with the seeds and
the only thing I've ever done with them is clean them
and bake them for a bit to toast them up and then
snack on them for a few days..
any suggestions?
also anyone know of the nutritional content of pumpkin
seeds?

I just eat them raw. I found I like them much better raw than I do roasted.
I also buy raw pumpkin seed bars at my health food store.

I chuck 'em in my cereal mix, or on top of salads, as well as roasting
& spicing.

When I was able to eat sandwiches on a regular basis I would spread one
slice of grain bread with fresh peanut butter (I.em. peanut butter made from
peanuts only, nothing else). I would top that with grated carrots, pumpkin
seeds, home grown alfalfa sprouts and cottage cheese. I also added a few
sultanas (small raisins in the US I believe - very soft though). Top with
another slice of grain bread. Made a wonderful lunch ;) Was also nice on
dense black rye bread as an open sandwich to eat with knife and fork.

The way I have used pumpking seeds after toasting, has been to put
them on salads, in soups, and chopped up with oats, ground flax and
any number of nuts, seeds and a bit of dried fruit, to put into hot
and cold cereals, and as a topping for home made crackers and breads,
or used as a mixed nut/seed snack.
A few things my mom did with pumpkin seeds, was to add them and other
nuts and seeds to popcorn balls and her popcorn cakes. Mom would also
roll candy apples in different chopped nut and seed mixes.

pepitas, there a quite a few recipe suggestions.

I buy them already shelled and roasted at the .99 cent store, and raw
or roasted at Trader Joe's, but if they are in shells, I'm with
you...one at a time with my teeth. :-)

thank you everyone who replied. with what we had left, we
ended up roasting them in the oven with Cinnimon on them
and they came out great! sadly, while we were carving them,
one of the dogs decided that she loved pumpkin and we had
to fight her off from tearing into them. she ate over half of the
pumpkin that I'd saved to make pies with.. so, now I have to
buy a couple of can's of pumpkin to make up for what she
ate.. and nope!! she didnt' get the poopies from it either, thank
GOD! (my greatest fear!)
