Most of the literatures on astronomy say that
the Zodiac is the belt that extend ~8 degrees on "either" sides of the
ecliptic. What is the meaning of "either" in that sntence?

Basically, as observed from Earth, the orbits of the other planets
in our solar system appear variously inclined to our ecliptic, the
earth-sun plane. Hence, the "belt" of latitude extending on either
side thereof, that's the belt in question, the planets against the
stars, particularly with regard to the seven planets out to Saturn.
